Our father started the business with a small shop and after him, we took over the business. The spices and flavors used to make chole is the real strength of our food,* says Deepak who runs his stall from Nai Sadak, Chandni Chowk. Lotan Ke Chole Kulche has a unique style of making Chole Kulche. Chole Kulche in this dish is not made of conventional Kabuli chana or white chana.
They are made of a special type of chole called dry matar that is boiled and served with spices as per taste. At Lotan*s you can even choose your chole in low, medium, or high spices. What makes it so special is the addition of fried aloo (potato) that adds an extra punch and crunch to the dish. The kulche served here are topped with butter and served piping hot. No wonder the softness of the kulche here is unmatched. Lotan*s also serves chole kulche to its patrons with a glass of lassi and a huge bowl of salad.
